After some trying-very-hard-to-take-good-food-pictures, I finally did some cooking. Tried lots of new stuff..a no bake chocolate cheesecake, which tasted splendid but didn’t set well. So I refrained from clicking this one. But, dear friends, don’t fret, intend to retry real soon and hopefully with gorgeous results.
Meanwhile, a cool raw mango drink was churned, a yumm tomato cream pasta dished up, cheesy bean quesadilla for Milee’s lunch box invented, some crisp savoury spiced crackers(Mathri) fried:)
But, this post is not exactly “cooked”. A delish! nevertheless. Fresh, lemony salad with so many flavors you will be surprised! Balled cantaloupe(musk melon) along with pitted cherries in a simple lemon-olive oil dressing, seasoned with fresh mint! Sigh! Such an effortless medley, but so divinely appetizing!
The cantaloupe shell made an excellent bowl for the colorful melange to be served in. The entire ensemble looked so inviting…, I couldn’t help myself clicking away. Pleased as a punch, umpteen number of shots taken, I was eager to upload. So, here I am with the formula for this simple concoction and some clicks for you to drool over.
1 cup musk melon(cantaloupe), diced or balled, your call
1 cup fresh cherries, pitted
Juice of 1 lime
rock salt to taste
1/2 tsp olive oil
a big spoon of chopped mint leaves
In a large bowl, place the fruits. Mix in lime juice, olive oil and salt. Sprinkle chopped mint leaves. Toss. Refrigerate for 30 minutes before serving.
Enjoy it cold!
The sweetness of the musk melon and cherries in a marinade of lime juice and salt…Wow! Trust me, its splendid on the palette.
